Chocolate Chip Energy Bites

With all of the candy and treats cropping up lately, I love having a sweet yet healthy alternative ready on hand. I recently made a batch of these bites for my good friend who just had her baby. Apparently they’re also known to help with lactation. Either way, they provide a nice boost of energy from healthy fats and protein, without the sugar crash. They are reminiscent of a chewy granola bar with the texture of cookie dough — translated to pretty irresistible. Just two or three make the perfect mid-morning or late afternoon snack.


1 cup old fashioned oats

1/2 cup ground flaxseed

1/2 cup chocolate chips

1/2 cup natural peanut butter

1/3 cup honey

1/2 tsp salt

1 tsp vanilla

*Creamy peanut butter works best, but you could use whatever you have on hand. My favorite is the organic Simply Balanced creamy peanut butter found at Target. It has the perfect texture and it’s not too salty.

**You could also add coconut flakes or chia seeds, but you may need to add more peanut butter or honey if they make the mixture too chunky.


In a large bowl, mix all ingredients together until thoroughly combined. Leave in the bowl and place in the refrigerator for 30-45 minutes so that the mixture can firm up. Once the “dough” is ready, use a small cookie scoop to form and roll the mixture in your hands to help shape each bite. The mixture will be slightly sticky but will form into a ball when rolled.

Makes about 22 bites that can be stored in the fridge for up to a week (if they last that long).
